In the official 1996 manga "Super Mario 64", 1-UP mushrooms are shown to grow from the bodies of deceased Marios, thus perpetuating the cycle of life and death. That is, by eating the mushroom, the power of the previously deceased Mario passes to Mario, which is why the mushroom has such an effect.
